Deliciously Fresh Vietnamese Salmon Spring Rolls Baked to Perfection

8 sheets rice paper

8 oz fresh salmon fillet, skinless

1 cup cooked vermicelli noodles

1 cup lettuce leaves, shredded

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 cup grated carrots

1 cucumber, julienned

2 tablespoons sesame oil

Salt and pepper to taste

Cooking spray or olive oil for brushing

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Season the salmon fillet with salt, pepper, and 1 tablespoon of sesame oil. Bake the salmon in the preheated oven for about 12-15 minutes or until fully cooked and flaky. Once done, remove from the oven and set aside to cool.

      While the salmon is baking, prepare the vegetables. In a small bowl, combine the shredded lettuce, grated carrots, mint, cilantro, and julienned cucumber.

        Once the salmon is cooled, flake it into bite-sized pieces and toss it with the remaining tablespoon of sesame oil.

          Fill a shallow dish with warm water. Dip one rice paper sheet into the warm water for about 30 seconds until it softens, then lay it flat on a clean surface.

            In the center of the rice paper, place a small amount of the cooked vermicelli noodles, some of the vegetable mixture, and a few pieces of the flaked salmon. Be careful not to overfill.

              Fold the sides of the rice paper inward, then roll it tightly from the bottom to the top to create a secure spring roll. Repeat this process with the remaining rice sheets and filling ingredients.

                Place the spring rolls seam-side down on the prepared baking sheet. Lightly mist or brush the rolls with cooking spray or olive oil to encourage browning.

                  Bake the spring rolls in the oven for about 10-12 minutes, or until they are golden and crispy.

                    Serve warm with a side of homemade peanut sauce or hoisin sauce for dipping.
