Ingredients
  

4 large bell peppers (any color)

2 cups mashed potatoes (preferably with garlic)

1 cup chopped kale (or cabbage)

1/2 cup green onions, sliced

1 cup shredded sharp cheddar cheese

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon dried thyme

1/2 teaspoon smoked paprika

Instructions
 

Preheat the oven to 375°F (190°C).

    Cut the tops off the bell peppers and remove the seeds and membranes. Lightly brush the exteriors with olive oil and place them upright in a baking dish.

      In a large mixing bowl, combine the mashed potatoes, chopped kale, green onions, thyme, smoked paprika, and half of the cheddar cheese. Season with salt and pepper to taste. Mix until well combined.

        Stuff each bell pepper generously with the colcannon mixture, pressing down to pack it tightly.

          Top each stuffed pepper with the remaining cheddar cheese.

            Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes or until the peppers are tender and the cheese is bubbly and golden.

              Carefully remove from the oven and let sit for a few minutes before serving.
