8 large eggs

2 cups whole milk

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

4 cups shredded hash brown potatoes, thawed

1 cup diced cooked ham

1 cup fresh spinach, chopped

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

Fresh chives for garnish

Instructions
 

Preheat your oven to 375°F (190°C) and grease a large 9x13-inch casserole dish with cooking spray.

    In a large mixing bowl, whisk together the eggs, whole milk, Dijon mustard, garlic powder, onion powder, salt, and pepper until well combined.

      In the prepared casserole dish, evenly spread the thawed hash browns as the base layer.

        Sprinkle the diced ham over the hash browns, followed by the chopped spinach.

          Pour the egg mixture over the layers in the casserole dish, ensuring everything is covered evenly.

            Top the casserole with shredded cheddar cheese and crumbled feta cheese.
