Ingredients
  

2 cups fresh or frozen cherries, pitted and halved

1/2 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon cinnamon (optional)

1 tablespoon cornstarch (optional for thicker consistency)

2 tablespoons water (if using cornstarch)

Instructions
 

In a medium saucepan, combine the cherries, sugar, lemon juice, vanilla extract, and cinnamon (if using). Stir gently to mix the ingredients well.

    Place the saucepan over medium heat and bring the mixture to a gentle simmer.

      Cook for about 10-15 minutes, stirring occasionally, until the cherries have released their juices and the mixture has thickened slightly.

        If you prefer a thicker compote, dissolve the cornstarch in 2 tablespoons of water in a small bowl. Once the cherries are simmering, add this mixture to the saucepan and cook for an additional 2-3 minutes, stirring constantly until the compote thickens.

          Remove the saucepan from heat and let the compote cool to room temperature.

            Once cooled, transfer the cherry compote to a clean jar or container. It can be served warm or chilled.
