1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup buttermilk

Zest of 2 large lemons

¼ cup fresh lemon juice

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 teaspoon vanilla extract

Powdered sugar for dusting (optional)

Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.

    In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.

      Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract and lemon zest until incorporated.

        In another bowl, whisk together the flour, baking powder, baking soda, and salt.

          Slowly add the dry ingredients to the creamed mixture, alternating with buttermilk and lemon juice. Start and end with the flour mixture. Mix until just combined—do not overmix.

            Pour the batter into the prepared cake pan, smoothing the top with a spatula.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

                Once baked, let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

                  Once cooled, dust the top with powdered sugar if desired for a sweet finish.
