Instructions
Prepare the Chicken: Season both sides of the chicken breasts with garlic powder, onion powder, dried Italian herbs, salt, and pepper.
Sear the Chicken: In a large skillet, heat olive oil over medium-high heat. Place the chicken breasts in the pan and cook for about 5-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Create the Sauce: In the same skillet, add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Add the fresh spinach and cook just until wilted.
Make it Creamy: Reduce the heat to low and add the softened cream cheese to the skillet. Stir continuously until the cream cheese has melted and combined with the tomatoes and spinach. Mix in the Parmesan cheese and lemon juice until a silky sauce forms.
Combine: Return the chicken to the skillet, spoon the creamy sauce over the top, and let it simmer for an additional 2-3 minutes to heat through.
Serve: Plate the chicken and drizzle with additional sauce from the skillet. Garnish with fresh basil leaves.
