2 cups fresh strawberries, hulled and sliced

1 tablespoon honey (or maple syrup)

2 cups strawberry ice cream or sorbet

2 cups sparkling water or soda (lemon-lime works well)

Whipped cream, for topping

Fresh mint leaves, for garnish

Instructions
 

In a medium mixing bowl, combine sliced strawberries and honey. Toss gently to coat the strawberries and let them sit for about 10 minutes to release their juices.

    In serving glasses, place a generous scoop of strawberry ice cream or sorbet at the bottom.

      Spoon the macerated strawberries, including any juices, over the ice cream in each glass.

        Slowly pour the sparkling water or soda over the strawberries and ice cream, filling the glass to the top.

          Top with a dollop of whipped cream and garnish with fresh mint leaves.
