Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
In a large bowl, combine the ground chicken, breadcrumbs, chopped cilantro, sliced green onions, minced garlic, grated ginger, red curry paste, fish sauce, brown sugar, beaten egg, salt, and black pepper. Mix well until fully combined.
Using your hands, form the mixture into small meatballs (about 1 to 1.5 inches in diameter) and place them on the prepared baking tray.
Lightly brush the meatballs with sesame oil for added flavor and to help them crisp up as they bake.
Place the tray in the preheated oven and bake for about 20-25 minutes, or until the meatballs are cooked through and golden brown on the outside.
Once done, remove from the oven and let rest for a minute. Serve warm with a side of sweet chili sauce for dipping or over a bed of jasmine rice for a full meal.
