8 large eggs

1 cup whole milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (red, green, and yellow)

1 cup cooked breakfast sausage, crumbled

1/2 cup diced onion

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 cups chopped fresh spinach

1 cup halved cherry tomatoes

Fresh basil or parsley for garnish

Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with non-stick spray.

    In a large mixing bowl, whisk together the eggs and milk until well combined. Season with garlic powder, smoked paprika, salt, and pepper.

      Stir in the shredded cheddar cheese, diced bell peppers, crumbled sausage, diced onion, and chopped spinach until evenly incorporated.
