2 medium eggplants, sliced into 1/4-inch thick rounds

1 teaspoon salt

1 cup all-purpose flour

2 large eggs, beaten

2 cups breadcrumbs (preferably seasoned)

3 cups marinara sauce

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

1 tablespoon dried basil

1 tablespoon dried oregano

Fresh basil leaves, for garnish

Begin by salting the sliced eggplant. Place the rounds in a colander and sprinkle them with salt. Let them sit for about 30 minutes to draw out excess moisture.

    Rinse the eggplant slices under cold water and pat dry with paper towels.

      Set up a breading station: place flour in one shallow dish, beaten eggs in another, and breadcrumbs mixed with dried basil and oregano in a third dish.

        Dredge each eggplant slice in flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Ensure each slice is well coated.

          In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices in batches until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

            Preheat your oven to 375°F (190°C).

              In a baking dish, spread a thin layer of marinara sauce on the bottom. Layer a third of the fried eggplant slices, a layer of marinara sauce, and a sprinkle of mozzarella and Parmesan cheese.

                Repeat the layers until all ingredients are used, finishing with a generous amount of cheese on top.

                  Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
