Ingredients

1 large bell pepper (red, yellow, or orange), sliced

1 large green bell pepper, sliced

1 large red onion, sliced

1 medium zucchini, sliced into half-moons

1 cup button mushrooms, sliced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1/2 teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

Fresh cilantro for garnish

Lime wedges for serving

Instructions

Prepare the Veggies: Slice all vegetables into similar sizes to ensure even cooking.

Season the Veggies: In a large mixing bowl, combine sliced bell peppers, red onion, zucchini, and mushrooms. Drizzle with olive oil and sprinkle with smoked paprika, cumin, garlic powder, cayenne pepper, salt, and pepper. Toss until all vegetables are well coated in the seasoning mix.

Sauté the Mixture: Heat a large skillet or a wok over medium-high heat. Once hot, add the seasoned veggies. Cook for about 7-10 minutes, stirring occasionally, until the vegetables are tender-crisp and slightly charred.

Do the Taste Test: Taste the veggies and adjust seasoning with more salt, pepper, or cayenne if desired.

Serve: Remove from heat and garnish with fresh cilantro. Serve with lime wedges for a zesty finish.
