2 cups diced potatoes

1 cup cooked, crumbled sausage (or plant-based sausage)

1 cup chopped bell peppers (mixed colors)

1 medium onion, diced

4 large eggs

1 cup milk (dairy or non-dairy)

1 cup shredded cheddar cheese

1 teaspoon garlic powder

Salt and pepper to taste

Fresh chives or parsley for garnish

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with olive oil or cooking spray.

    In a large mixing bowl, combine the diced potatoes, cooked sausage, bell peppers, and diced onion. Mix well.

      In another bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until fully combined.

        Pour the egg mixture over the potato and sausage mixture in the first bowl. Stir until everything is evenly coated.

          Transfer the mixture to the prepared casserole dish and spread it out evenly.

            Sprinkle the shredded cheddar cheese generously over the top of the casserole.

              Cover the dish with aluminum foil and bake in the oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the edges are bubbling.

                Once cooked, remove from the oven and let it sit for 10 minutes before slicing.

                  Garnish with fresh chopped chives or parsley before serving for a burst of color and flavor.
