1 cup cottage cheese

3 large eggs, separated

1/4 teaspoon cream of tartar

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon salt

1/4 teaspoon baking powder

1 tablespoon fresh herbs (like chives or parsley), chopped (optional)

Instructions
 

Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper.

    In a mixing bowl, combine the cottage cheese and egg yolks. Stir until well blended and smooth.

      In a separate bowl, beat the egg whites with cream of tartar using an electric mixer until stiff peaks form. This should take about 3-5 minutes.

        Gently fold the whipped egg whites into the cottage cheese and egg yolk mixture. Use a spatula to combine without deflating the egg whites.

          Sprinkle in the garlic powder, onion powder, salt, baking powder, and the fresh herbs if using. Carefully fold until just incorporated.

            Spoon dollops of the mixture onto the prepared baking sheet, shaping them into circular “clouds” about 2 inches in diameter.

              Bake for 25-30 minutes or until the tops are golden and firm to the touch.

                Allow the cloud bread to cool slightly on the baking sheet before transferring to a wire rack.
