Fondant Potatoes Recipes

4 large russet potatoes, peeled and cut into large cylinders

4 tablespoons unsalted butter

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

1 teaspoon fresh rosemary, chopped

2 cups vegetable broth

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat the oven to 400°F (200°C).

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the potato cylinders to the skillet, cut side down. Sear for 4-5 minutes until golden brown and crispy, then flip and sear the other side for an additional 4 minutes. Remove potatoes and set aside.

      In the same skillet, reduce the heat to medium. Add the butter and let it melt, then add the minced garlic, thyme, and rosemary. Cook for about 1 minute until fragrant but not browned.

        Place the seared potatoes back in the skillet, standing up on their cut sides. Pour the vegetable broth around the potatoes, ensuring the broth covers about half of each potato (so they can absorb the flavors). Season with salt and pepper.

          Transfer the skillet to the preheated oven and bake for approximately 25-30 minutes or until the potatoes are tender and the broth has reduced but not fully evaporated.

            Once done, remove from the oven and let them rest for a few minutes. Baste the tops of the potatoes with the garlicky herbed broth from the skillet.

              For serving, plate the potatoes upright on individual dishes, drizzle a bit of the remaining broth over them, and sprinkle with fresh parsley for a vibrant finish.
