1 lb thinly sliced beef (such as flank steak)

2 large onions, thinly sliced

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon salt

1 teaspoon pepper

1 cup beef broth

1 teaspoon thyme (fresh or dried)

1 cup shredded Swiss cheese

8 large crescent roll dough sheets

Fresh parsley for garnish

Caramelize the Onions: In a large skillet, heat olive oil and butter over medium heat. Add the sliced onions and sprinkle with salt. Cook for about 15-20 minutes, stirring occasionally, until golden brown and caramelized. Add thyme and beef broth, and simmer for an additional 5 minutes, allowing the flavors to meld. Remove from heat and let cool slightly.

    Prepare the Beef Roll-Ups: Lay out the thinly sliced beef on a clean surface. Season with pepper. On each slice, place a spoonful of the caramelized onion mixture at one end and top with a sprinkle of Swiss cheese.

      Roll and Seal: Carefully roll the beef slice over the filling, starting from the end with the filling. You can secure each roll-up with a toothpick if necessary, though the beef should hold together well.
