1 lb ground beef

1 lb ground pork

2 large onions, thinly sliced

2 cloves garlic, minced

1 cup beef broth

1 cup breadcrumbs

2 large eggs

1 tablespoon Worcestershire sauce

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

1 tablespoon olive oil

Salt and pepper to taste

1 cup shredded Gruyère cheese

Preheat the oven to 350°F (175°C). Line a loaf pan with parchment paper for easy removal later.

    Sauté the onions: In a skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes. Add the minced garlic and sauté for an additional minute. Remove from heat and let cool slightly.

      Prepare the meat mixture: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, eggs, Worcestershire sauce, thyme, and half of the caramelized onions (reserve the other half for topping). Season generously with salt and pepper.

        Add beef broth: Pour in the beef broth and mix until just combined, being careful not to overmix.

          Form the meatloaf: Transfer the meat mixture to the prepared loaf pan, shaping it into a loaf. Use a spatula to smooth the top.

            Add cheese and onion topping: Press the remaining caramelized onions on top of the meatloaf and sprinkle with shredded Gruyère cheese.

              Bake: Place the meatloaf in the oven and bake for 1 hour, or until the internal temperature reaches 160°F (70°C).

                Rest and serve: Once cooked, remove the meatloaf from the oven and allow it to rest for 10 minutes. Slice and serve.
