Ingredients

1 lb flank steak, thinly sliced

2 medium onions, caramelized

1 cup shredded Gruyère cheese

½ cup breadcrumbs

2 tablespoons soy sauce

2 tablespoons balsamic vinegar

3 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

Olive oil for searing

Fresh parsley, chopped for garnish

Instructions

Prepare the Ingredients: Begin by caramelizing the onions. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, a pinch of salt, and cook, stirring occasionally, for about 15-20 minutes until golden brown and soft. Set aside to cool.

Prepare the Flank Steak: Place the flank steak slices between two sheets of plastic wrap. Using a meat mallet, gently pound the steak to about 1/4 inch in thickness for easier rolling.

Season the Steak: In a small bowl, mix together the soy sauce, balsamic vinegar, minced garlic, thyme, salt, and pepper. Brush this marinade over both sides of the steak.

Assemble the Pinwheels: On each slice of flank steak, layer a portion of the caramelized onions, followed by a generous sprinkle of Gruyère cheese, and finish with some breadcrumbs. Roll each slice tightly from one end to the other, securing with toothpicks or kitchen twine.

Sear the Pinwheels: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the steak pinwheels for about 3-4 minutes on each side until nicely browned and cooked to your desired level of doneness. (Note: Adjust cooking time based on steak thickness.)

Rest and Serve: Once cooked, remove the pinwheels from the skillet and let them rest for about 5 minutes before slicing into bite-sized pieces.

Garnish and Enjoy: Arrange the pinwheels on a serving platter, sprinkle with fresh chopped parsley, and serve warm.
