- Pre-made pie crust options: You can use a store-bought crust or make your own from scratch. Store-bought is quick and easy. Homemade can add extra love and flavor. - Fresh tomatoes: Use 4-5 medium ripe tomatoes. Heirloom tomatoes work best for flavor. They add sweetness and depth to your pie. - Cheese varieties: I recommend a mix of mozzarella, ricotta, and feta. Mozzarella melts well and gives a nice stretch. Ricotta adds creaminess, while feta brings a salty bite.

Ingredients

1 pre-made pie crust (store-bought or homemade)

4-5 medium ripe tomatoes, sliced (preferably heirloom for more flavor)

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1/2 cup feta cheese, crumbled

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried oregano

1 tablespoon balsamic glaze (for drizzling)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Pie Crust: Place the pie crust into a 9-inch pie dish, pressing it firmly against the sides and bottom. Prick the bottom with a fork to prevent bubbling.

Bake the Pie Crust: Bake the pie crust in the preheated oven for 10 minutes until lightly golden. Remove from oven and let cool slightly.

Sauté Garlic: In a small pan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant. Set aside.

Layer the Cheese: Spread the ricotta cheese evenly over the bottom of the baked pie crust. Then add shredded mozzarella on top.

Add Tomatoes: Arrange the sliced tomatoes on top of the cheese layer, overlapping slightly. Sprinkle salt, black pepper, oregano, and the sautéed garlic evenly over the tomatoes.

Top with Feta and Basil: Crumble feta cheese over the tomatoes and add the chopped fresh basil.

Bake the Pie: Bake in the oven for 25-30 minutes, or until the tomatoes are softened and the cheese is bubbly and golden.

Drizzle with Balsamic: Let the pie cool for about 10 minutes before serving. Drizzle the balsamic glaze over the pie for an extra flavor kick.
