1 ripe pineapple, peeled and sliced into 1/2-inch thick rings

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/2 cup coconut milk (or water)

1 tablespoon sugar

Oil for frying (coconut oil for a tropical flavor)

Shredded coconut (sweetened or unsweetened) for garnish

Optional: Whipped cream or ice cream for serving

Instructions
 

Start by preparing the pineapple. Cut off the top and bottom, stand the pineapple upright, and slice off the skin. Cut into rings and remove the core from each slice.

    In a mixing bowl, whisk together the flour, cornstarch, baking powder, cinnamon, nutmeg, and sugar until well blended.

      Gradually add the coconut milk to the dry ingredients, stirring until you have a smooth batter. If the batter feels too thick, add a little more coconut milk to reach a pancake batter-like consistency.

        Heat about 1 inch of oil in a deep skillet or frying pan over medium-high heat. The oil should be hot enough that a drop of batter sizzles when added.

          Dip each pineapple ring into the batter, ensuring it's fully coated, and carefully place it in the hot oil.

            Fry the rings for about 2-3 minutes on each side or until they are golden brown and crispy. Remove from the oil and place on a plate lined with paper towels to drain excess oil.

              While the fried rings are still warm, sprinkle them generously with shredded coconut.

                Serve immediately and enjoy as is, or with a dollop of whipped cream or a scoop of ice cream on the side for an indulgent treat!
