Ingredients

1 ripe pineapple, peeled and sliced into rings

1 cup all-purpose flour

1 cup shredded coconut (sweetened or unsweetened)

1 cup panko breadcrumbs

2 large eggs

1/4 cup milk (dairy or non-dairy)

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Oil for frying (coconut oil or vegetable oil)

Honey or maple syrup for drizzling (optional)

Instructions

Prepare the Pineapple: Slice the pineapple into rings and set them aside on a paper towel to absorb any excess moisture. This will help the crust stick better.

Set Up Breading Station: In three separate bowls, place the flour (seasoned with a pinch of salt), the whisked eggs mixed with milk and vanilla extract, and a combination of shredded coconut, panko breadcrumbs, and cinnamon.

Coat the Pineapple: Take each pineapple ring and coat it in the flour, shaking off any excess. Next, dip it into the egg mixture, ensuring it’s fully covered, and then finally press it into the coconut-panko mixture until well coated.

Fry the Pineapple: Heat about 1-inch of oil in a large skillet over medium heat. Once the oil is hot (approximately 350°F or 175°C), carefully add the breaded pineapple rings in batches, making sure not to overcrowd the pan. Fry them for about 2-3 minutes on each side or until golden brown and crispy.

Drain Excess Oil: After frying, place the pineapple rings on a plate lined with paper towels to absorb any excess oil.

Serve: Arrange the fried pineapple rings on a serving platter. Drizzle with honey or maple syrup if desired for added sweetness and flavor.

                - Presentation Tips: Serve warm as a delightful dessert or snack, garnished with fresh mint leaves for a pop of color. Consider adding a scoop of vanilla ice cream on the side for an indulgent treat!
