4 medium russet potatoes, peeled and diced

1 pound smoked Polish sausage, sliced into half-moons

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Begin by placing the diced potatoes in a pot of salted water. Bring to a boil and cook for about 5-7 minutes until just tender but not falling apart. Drain and set aside.

    Cook the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced Polish sausage and cook until browned and crispy, about 5-7 minutes. Remove the sausage from the skillet and set aside, keeping the drippings in the pan.

      Saute Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the chopped onion and diced bell pepper. Sauté until the onion becomes translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

        Combine Ingredients: Add the pre-cooked potatoes to the skillet along with the smoked sausage. Sprinkle in the smoked paprika, dried thyme, salt, and pepper.
