4 medium russet potatoes, peeled and diced

1 lb smoked Polish sausage, sliced into rounds

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and black pepper to taste

3 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Place the diced potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook for 10 minutes until just tender but not falling apart. Drain and set aside.

    Sauté the Sausage: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced Polish sausage and cook for about 5-7 minutes until browned and slightly crispy. Remove from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the remaining olive oil. Add the onion, garlic, and bell pepper. Sauté for about 5 minutes until softened and aromatic.

        Combine & Season: Add the drained potatoes to the skillet with the sautéed vegetables. Sprinkle in the smoked paprika, dried thyme, salt, and pepper. Gently toss everything together, ensuring the potatoes are well-coated.

          Fry until Crispy: Spread the potato mixture evenly in the skillet and let them cook undisturbed for about 7-10 minutes until the bottom is golden brown and crispy.

            Add Sausage & Finish Cooking: Stir in the crispy sausage pieces and cook for an additional 2-3 minutes, allowing the flavors to meld together.
