8 slices of thick brioche bread

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1/2 teaspoon ground cinnamon

2 eggs

1 cup milk

1 cup all-purpose flour

1 cup breadcrumbs (panko preferred for extra crunch)

Vegetable oil for frying

Whipped cream for serving (optional)

Fresh mint leaves for garnish (optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy. Set aside.

    Take four slices of brioche bread and spread a generous layer of the cream cheese mixture on each slice. Top with sliced strawberries, then cover with the remaining four slices to form sandwiches.

      In a shallow bowl, whisk together the eggs and milk until well combined. In another shallow bowl, mix the flour, ground cinnamon, and a pinch of salt. Place the breadcrumbs in a third shallow bowl.

        Heat about 1 inch of vegetable oil in a large skillet over medium heat until hot.

          Dip each sandwich first into the egg mixture, then into the flour mixture, coating both sides. Lastly, press it into the breadcrumbs to fully coat the sandwich.

            Once the oil is hot, carefully place two sandwiches in the skillet (or more as space permits) and fry for about 3-4 minutes on each side until golden brown and crispy.

              Remove the fried sandwiches and place them on a paper towel-lined plate to drain any excess oil.

                Slice each sandwich in half, and serve warm, dusted with extra powdered sugar and a dollop of whipped cream if desired. Garnish with fresh mint leaves for an added touch.
