1 lb ground pork

1 cup breadcrumbs

1 medium onion, finely chopped

2 garlic cloves, minced

2 large eggs

1/2 cup milk

1 tablespoon Worcestershire sauce

1/4 cup ketchup (plus extra for frosting)

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup mashed potatoes (prepared, for frosting)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, minced garlic, eggs, milk, Worcestershire sauce, 1/4 cup ketchup, Italian seasoning, salt, and pepper. Mix until all ingredients are well incorporated.

      Shape the meat mixture into a loaf and place it in a lightly greased 9x5-inch loaf pan or on a baking sheet lined with parchment paper.

        Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 160°F (70°C).

          Remove the meatloaf from the oven and let it rest for 10 minutes.

            While the meatloaf is resting, prepare the frosting. Take the mashed potatoes and mix in a sprinkle of salt and pepper for added flavor.

              Once the meatloaf has rested, spread a layer of ketchup on top for the frosting. Then, pipe or spread the mashed potatoes over the meatloaf as if frosting a cake. For added flair, create peaks or designs with a fork or piping bag.

                Return the decorated meatloaf to the oven and bake for an additional 10-15 minutes, allowing the frosting to set slightly.

                  Remove from the oven again and let it cool for another 5 minutes. Garnish with fresh chopped parsley before slicing.
