Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a medium bowl, soak the mixed dried fruits in fresh orange juice for about 30 minutes.
In a large mixing bowl, whisk together the brown sugar, applesauce, vegetable oil, and eggs until combined.
Add the soaked dried fruits (with juice), orange zest, lemon zest, and vanilla extract to the sugar mixture. Stir until well blended.
In another bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
Fold in the chopped nuts gently to the batter.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Once baked, allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once cooled, garnish with extra dried fruits and nuts on top for added flair, if desired.
Notes
Serve on a decorative cake stand with a sugar glaze for added sweetness.
