1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for a bit of heat)

1 cup (100g) uncooked pasta (fettuccine or spaghetti)

1/2 cup (50g) grated Parmesan cheese

1/4 cup (60ml) chicken broth

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the pasta and set aside.

    Sear the Chicken: In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the diced chicken to the skillet, season with salt, pepper, and Italian seasoning. Sear the chicken for about 5-7 minutes, until cooked through and lightly golden.

      Add Garlic and Butter: Lower the heat and push the chicken to one side of the skillet. In the empty side, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for 1-2 minutes until fragrant, then combine with the chicken.

        Make the Sauce: Pour in the chicken broth and bring everything to a gentle simmer. Add in the red pepper flakes if using. Let it cook for another 3-5 minutes to thicken slightly.

          Combine Pasta and Sauce: Add the drained pasta to the skillet with the chicken and garlic butter sauce. Toss everything together until well coated, adding a splash of the reserved pasta water if needed for consistency.

            Finish with Parmesan: Remove the skillet from the heat and sprinkle the grated Parmesan cheese over the pasta. Toss until the cheese is melted and incorporated.
