2 salmon fillets (approx. 6 oz each)

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 can (15 oz) white beans (cannellini or northern), drained and rinsed

Juice and zest of 1 lemon

1 cup baby spinach

Fresh parsley, chopped (for garnish)
