1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 teaspoon lemon juice

8 slices of your favorite bread (sourdough or brioche works great)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Salt and pepper to taste

Instructions
 

In a skillet over medium heat, melt 2 tablespoons of unsalted butter.

    Add the minced garlic and red pepper flakes (if using) to the skillet, sautéing until fragrant, about 1 minute.

      Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, approximately 2-3 minutes per side.

        Drizzle lemon juice over the shrimp and toss to combine. Remove from heat and set aside.

          Meanwhile, heat a separate skillet or griddle over medium-low heat for grilling the sandwiches.

            Take 4 slices of bread and spread butter evenly on one side of each slice.

              On the unbuttered sides, layer shredded mozzarella and grated Parmesan cheese generously.

                Evenly distribute the shrimp mixture over the cheese on each sandwich.

                  Top with remaining slices of bread, buttered side facing out.

                    Grill each sandwich for about 3-4 minutes on each side, or until the bread is golden brown and cheese is melty.

                      Remove from the skillet and let cool for a minute before slicing.
