12 lasagna noodles

1 pound large shrimp, peeled and deveined

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese

1 tablespoon lemon juice

Zest of 1 lemon

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    In a large skillet, melt 2 tablespoons of butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

      Add the shrimp to the skillet, season with salt and pepper, and cook until shrimp turn pink, about 2-3 minutes. Remove the shrimp from the skillet and set aside.

        In the same skillet, lower the heat and add heavy cream. Stir in the remaining butter, Parmesan cheese, lemon juice, and lemon zest. Simmer for 2-3 minutes until slightly thickened, then season with salt and pepper to taste.

          Spread a thin layer of the garlic butter sauce on the bottom of a 9x13 inch baking dish. Layer 4 lasagna noodles on top.

            Next, add half of the shrimp mixture over the noodles, followed by one-third of the mozzarella. Pour a layer of the garlic butter sauce over the cheese.

              Repeat the layering process (noodles, shrimp, mozzarella, sauce) once more. For the final layer, place the last 4 noodles on top and cover with the remaining sauce and mozzarella cheese.

                Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                  Let the lasagna cool for 5 minutes before slicing. Garnish with chopped parsley before serving.
