Garlic Butter Steak and Potatoes Skillet

Ingredients
  

1 lb sirloin steak, cut into 1-inch cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

5 cloves garlic, minced

2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried rosemary)

2 teaspoons fresh thyme, chopped (or 1 teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon olive oil

Optional: Fresh parsley for garnish

Cook the Potatoes: In a large skillet, heat the olive oil over medium heat. Add the halved baby potatoes, season with salt and pepper, and cook for about 15-20 minutes, stirring occasionally, until they're golden brown and tender. Remove the potatoes from the skillet and set aside.

    Cook the Steak: In the same skillet, increase the heat to medium-high. Add the steak cubes and season with salt and pepper. Sear the steak for about 4-5 minutes, or until browned and cooked to your desired doneness. Remove from the skillet and let rest for a few minutes.

      Prepare the Garlic Butter: Lower the heat to medium. In the same skillet, add the butter and let it melt. Once melted, add the minced garlic, rosemary, and thyme, stirring constantly for about 1-2 minutes until fragrant.

        Combine Everything: Return the steak and potatoes to the skillet, tossing to coat them in the garlic butter. Cook for another 2-3 minutes to heat through.

          Serve: Remove from heat, garnish with fresh parsley if desired, and serve hot.
