Ingredients

For the Steak Bites:

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

For the Cheesy Smashed Potatoes:

2 lbs baby potatoes, halved

1 cup shredded sharp cheddar cheese

½ cup cream cheese, softened

1/4 cup milk (or more for desired creaminess)

2 tablespoons sour cream

2 tablespoons chives, chopped

Salt and pepper to taste

Instructions

Prepare the Potatoes:

    - Place the halved baby potatoes in a large pot, cover with water, and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.

      Mash the Potatoes:

        - In a large mixing bowl, combine the cooked potatoes, cream cheese, milk, sour cream, salt, and pepper. Use a potato masher or fork to gently smash and mix everything together until you reach your desired creaminess. Fold in the shredded cheddar cheese and chopped chives.

          Cook the Steak Bites:

            - Heat a large skillet over medium-high heat. Add 2 tablespoons of butter to the pan. Once melted, add the steak cubes in a single layer. Season with salt and pepper.

              - Cook for about 2-3 minutes on each side for medium-rare, or to your preferred doneness. Remove the steak bites from the skillet and set aside.

                Make Garlic Butter:

                  - In the same skillet, lower the heat to medium, and add the remaining 2 tablespoons of butter. Add minced garlic and thyme, cooking for about 1-2 minutes until fragrant. Return the cooked steak bites to the skillet, tossing them in the garlic butter to coat evenly.

                    Plate the Dish:

                      - Serve the cheesy smashed potatoes on a plate, creating a small well in the center. Spoon the garlic butter steak bites into the well and drizzle any extra garlic butter over the top. Garnish with fresh parsley.
