Garlic Butter Steak Bites and Mash

1 pound sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper to taste

1 pound Yukon gold potatoes, peeled and chopped

½ cup heavy cream

¼ cup cream cheese

2 tablespoons chives, finely chopped (for garnishing)

Instructions
 

Begin by boiling the chopped Yukon gold potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain the potatoes and set aside.

    While the potatoes are boiling, heat a large skillet over medium-high heat. Add 2 tablespoons of butter.

      Season the steak bites with salt and pepper, then add them to the skillet in a single layer. Sear the steak bites for about 2-3 minutes on each side until they're browned but still medium-rare. You may need to do this in batches to avoid overcrowding the pan.

        Once the steak bites are cooked, remove them from the skillet and set aside.

          In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of butter. Add the minced garlic, rosemary, and thyme, and sauté for about 1-2 minutes, until fragrant.

            Return the steak bites to the skillet and toss them in the garlic butter until well coated. Cook for an additional minute to reheat, then remove from the heat.

              For the creamy mash, return the potato to the pot. Add in the heavy cream, cream cheese, and a pinch of salt and pepper. Use a potato masher to combine until smooth and creamy. Adjust seasoning as necessary.

                Serve the garlic butter steak bites over a generous scoop of creamy mash. Garnish with freshly chopped chives.
