Ingredients

1 lb (450g) sirloin steak, cut into 1-inch cubes

3 medium potatoes, diced into 1-inch cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Prep the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 8-10 minutes until partially tender but not fully cooked. Drain and set aside.

Season the Steak: While the potatoes are boiling, season the steak cubes liberally with salt, pepper, and smoked paprika. Ensure all sides are well-coated.

Cook the Potatoes: In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the partially cooked potatoes in a single layer. Cook for about 5-7 minutes, turning occasionally until they are golden brown and crispy. Remove the potatoes and set them aside on a plate.

Sear the Steak Bites: In the same skillet, add another tablespoon of olive oil. Add the seasoned steak bites in a single layer and sear for 2-3 minutes on one side without moving them to develop a crust. Flip the steak bites and cook for an additional 2-3 minutes until they reach your desired doneness.

Add Garlic and Butter: Once the steak bites are cooked, reduce heat to medium-low. Push the steak to one side of the skillet and add the remaining butter, minced garlic, and thyme to the empty side. Let the garlic sauté for about 1 minute until fragrant, then stir it into the steak bites.

Combine Potatoes and Steak: Reintroduce the crispy potatoes to the skillet and toss everything together to coat in the garlic butter, cooking for another minute to allow the flavors to meld.

Serve: Remove from heat and taste, adjusting salt and pepper if necessary.

                Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 4

                  - Presentation Tips: Serve the steak bites and potatoes in a large bowl, garnished with freshly chopped parsley for a pop of color. Optionally, drizzle with a little extra garlic butter from the pan for added richness.
