For the Steak Bites:

1 lb sirloin steak, cut into 1-inch cubes

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh thyme leaves

Salt and pepper to taste

For the Smashed Potatoes:

1 lb baby potatoes, boiled until fork-tender

2 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 cup sharp cheddar cheese, shredded

2 tablespoons fresh chives, chopped

Instructions
 

Prepare the Potatoes:

    - Preheat the oven to 425°F (220°C).

      - Place the boiled baby potatoes on a baking sheet lined with parchment paper.

        - Using a fork or the bottom of a glass, gently smash each potato until they are flattened but still intact.

          - Drizzle with olive oil and sprinkle garlic powder, salt, and pepper over them. Toss to coat.

            Add the Cheese:

              - Bake the smashed potatoes in the preheated oven for about 20 minutes until they start to turn golden and crispy.

                - Remove from the oven and sprinkle shredded cheddar cheese on top of each potato.

                  - Return to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.

                    Cook the Steak Bites:

                      - While the potatoes are baking, heat a large skillet over medium-high heat.

                        - Add 2 tablespoons of butter. Once melted, add the steak cubes and season with salt and pepper.

                          - Sear the steak bites for 2-3 minutes on each side, or until browned and cooked to your desired doneness. Remove from the skillet and set aside.

                            Make the Garlic Butter Sauce:

                              - In the same skillet, reduce the heat to medium. Add the remaining 2 tablespoons of butter and minced garlic. Sauté for 1-2 minutes until fragrant.
