1 pound ground chicken

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

3 cloves garlic, minced

1/4 cup parsley, finely chopped

1 large egg

1 teaspoon onion powder

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 cup milk

1/4 cup ketchup (for topping)

1 tablespoon olive oil (for drizzling)

Instructions
 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, and chopped parsley.

      Add the egg, onion powder, Italian seasoning, salt, pepper, and milk to the bowl. Mix everything together until well combined, but be careful not to overmix.

        Divide the mixture into equal portions (about 4-6) and shape each portion into a small loaf (similar to mini loaves).

          Place the shaped meatloaves on the prepared baking sheet, spacing them evenly.

            Spoon a small amount of ketchup on top of each meatloaf and drizzle with olive oil to keep them moist.

              Bake in the preheated oven for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

                Once cooked, remove from the oven and let them rest for 5 minutes before serving.
