250g spaghetti or linguine

6 cloves garlic, thinly sliced

1/2 cup olive oil

1/4 teaspoon red pepper flakes (adjust to taste)

1 lemon (zested and juiced)

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish

Salt and pepper to taste

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti or linguine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Make the Garlic Oil: In a large skillet over medium heat, add the olive oil. Once hot, gently add the sliced garlic and red pepper flakes. Sauté for about 2-3 minutes, stirring constantly, until the garlic is golden and fragrant (be careful not to burn it).

      Combine Pasta and Sauce: Add the drained pasta to the skillet with the garlic oil. Toss to coat the pasta evenly.

        Add Lemon Flavor: Zest and juice the lemon, then pour both over the pasta. Stir to incorporate flavors. If the pasta seems dry, add a little bit of the reserved pasta water, one tablespoon at a time, until you reach your desired consistency.
