4 medium potatoes, peeled and diced

1 large onion, finely chopped

2 carrots, diced

2 celery stalks, diced

4 cups vegetable broth

1 cup heavy cream (can substitute with coconut cream for a dairy-free option)

1 teaspoon smoked paprika

1 teaspoon dried thyme

2 tablespoons butter or olive oil

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Croutons or crispy bacon bits (for topping, optional)

Instructions
 

In a large pot, melt the butter (or heat olive oil) over medium heat. Add the chopped onions, and sauté until they become translucent, about 5 minutes.

    Add the diced carrots and celery to the pot and sauté for another 5 minutes until they start to soften.

      Stir in the diced potatoes, smoked paprika, and dried thyme. Cook for an additional 2-3 minutes.

        Pour in the vegetable broth, ensuring that all the vegetables are submerged. Increase heat to high and bring to a boil.

          Once boiling, reduce heat to low, cover, and let it simmer for about 20 minutes or until the potatoes are fork-tender.

            Use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half or use a potato masher to break down some of the potatoes.

              Stir in the heavy cream (or coconut cream) and season with salt and pepper to taste. Heat through for another 5 minutes without boiling.

                Serve the soup hot, garnished with fresh chives and topped with croutons or crispy bacon bits if desired.
