1 cup gluten-free all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

1 cup milk (dairy or non-dairy)

1 large egg

2 tablespoons maple syrup

1 teaspoon vanilla extract

1/2 cup cream cheese, softened

1/4 cup powdered sugar

1 cup fresh strawberries, diced

Extra strawberries for topping

Whipped cream for serving

Instructions
 

In a large mixing bowl, combine gluten-free flour, baking powder, and salt. Whisk until well mixed.

    In a separate bowl, whisk together the milk, egg, maple syrup, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.

      In another bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Gently fold in the diced strawberries into the cream cheese mixture. Set aside.

        Preheat a non-stick skillet or griddle over medium heat. Lightly grease it with a bit of butter or coconut oil.

          Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes, or until you see bubbles forming on the surface. Flip and cook for an additional 1-2 minutes until golden brown.

            Remove the pancakes from the skillet and repeat with the remaining batter.

              To assemble, stack 2-3 pancakes on a plate, spread a layer of the strawberry cream cheese mixture between the pancakes, and top with more strawberries.

                Drizzle with additional maple syrup or a dollop of whipped cream before serving.
