Ingredients

24 Golden Oreo cookies, crushed

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1/2 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup fresh strawberries, diced

1/4 cup powdered sugar

Whipped cream for topping (optional)

Additional strawberries for garnish

Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9x9 inch baking dish with butter or line it with parchment paper.

Make the Crust: In a mixing bowl, combine the crushed Golden Oreos and melted butter. Mix until well combined. Press this mixture evenly into the bottom of the prepared baking dish to form the crust.

Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese until smooth. Add the granulated sugar and vanilla extract, and blend until creamy.

Add Eggs: Add the eggs one at a time, mixing well after each addition.

Mix in Strawberries: Gently fold in the diced strawberries and powdered sugar into the cheesecake mixture until evenly distributed.

Pour and Bake: Pour the cheesecake filling over the crust and smooth out the top with a spatula. Bake in the preheated oven for 30-35 minutes, or until the center is set but slightly jiggly.

Cool and Chill: Remove from the oven and cool at room temperature for about 30 minutes. Then refrigerate for at least 3 hours, or until completely chilled and set.

Slice: Once chilled, use a sharp knife to slice the cheesecake into bars.

Serve: Optionally, top each bar with a dollop of whipped cream and garnish with additional fresh strawberries.

Prep Time: 20 minutes | Total Time: 4 hours 15 minutes | Servings: 12 bars

                      - Presentation Tips: Serve the bars on a white platter for contrast, and drizzle some strawberry puree on the plate for a stunning finish. You can also sprinkle some crushed Golden Oreos on top for an added crunch.
