4 cups yellow onions, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon sugar

Salt and black pepper, to taste

1 teaspoon dried thyme

1 cup beef or vegetable broth

1 tablespoon balsamic vinegar

8 slices of sourdough or whole grain bread

2 cups Gruyère cheese, shredded

1 cup sharp cheddar cheese, shredded

2 tablespoons Dijon mustard

Fresh parsley or chives, for garnish (optional)

Instructions
 

Caramelize the Onions: In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions, sugar, and a pinch of salt. Cook for about 15-20 minutes, stirring frequently, until the onions are soft and golden.

    Add Seasonings: Once the onions are caramelized, stir in the dried thyme, broth, and balsamic vinegar. Cook for another 5-10 minutes until the liquid reduces slightly. Season with additional salt and pepper to taste. Remove from heat and set aside.

      Prepare the Bread: Spread Dijon mustard on one side of each slice of bread. On the uncoated side, layer the shredded Gruyère and cheddar cheeses. Top half of the sandwiches with a generous scoop of caramelized onions, then sprinkle more cheese on top before placing the second slice of bread mustard-side-up.

        Grill the Sandwiches: In a clean skillet, heat about 1 tablespoon of butter over medium heat. Grill the sandwiches for 3-4 minutes on each side, or until golden brown and the cheese is melted. You may need to press down slightly while cooking for even grilling.

          Serve Hot: Once grilled, remove from the skillet and allow to cool for a minute. Cut the sandwiches in half and serve with a sprinkle of fresh parsley or chives for a burst of color.
