4 slices of sourdough bread

6 oz Gouda cheese, grated

1 cup mushrooms (cremini or shiitake), sliced

1 medium onion, thinly sliced

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper to taste

Roast the Mushrooms and Onions: Preheat your oven to 400°F (200°C). On a baking sheet, toss the sliced mushrooms and onions with olive oil, thyme, salt, and pepper. Spread them out evenly and roast in the oven for about 20-25 minutes, or until they are caramelized and tender. Stir halfway for even cooking.

    Prepare the Sourdough: While the vegetables are roasting, butter one side of each slice of sourdough bread. Make sure the butter is evenly spread to ensure a golden crust.

      Assemble the Sandwich: Flip half of the slices of bread over (butter side down) and layer them with grated Gouda cheese, followed by the roasted mushrooms and onions. Top with another layer of Gouda cheese before placing the other slice of bread on top (butter side up).
