1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cucumbers, diced

1 cup cherry tomatoes, halved

1 cup bell peppers (red or yellow), diced

1/2 cup red onion, finely chopped

1/3 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

1/4 cup extra-virgin olive oil

3 tablespoons lemon juice

1 garlic clove, minced

Salt and pepper to taste

1 teaspoon dried oregano

Instructions
 

In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 15 minutes, or until all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and allow to cool.

    While the quinoa is cooling, prepare the veggies. In a large mixing bowl, combine the diced cucumbers, cherry tomatoes, bell peppers, red onion, and Kalamata olives.

      In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper until well blended.

        Add the cooled quinoa to the vegetable mixture. Pour the dressing over the salad and gently toss to combine everything evenly.

          Finally, fold in the crumbled feta cheese and fresh parsley.

            Taste and adjust the seasoning if needed. Serve chilled or at room temperature.
