2 slices of sourdough bread

1 cup Gouda cheese, shredded

1 cup mixed mushrooms (shiitake, cremini, and button), sliced

1/2 medium onion, thinly sliced

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1/2 tablespoon dried thyme)

Salt and pepper to taste

2 tablespoons unsalted butter

Prepare the Roasted Mushrooms and Onions:

    - Preheat your oven to 400°F (200°C).

      - In a baking dish, combine the sliced mushrooms and onions with olive oil, thyme, salt, and pepper. Toss until everything is well coated.

        - Spread the mixture in an even layer and roast for about 20-25 minutes, stirring halfway through, until the mushrooms are tender and the onions are caramelized.

          Assemble the Sandwich:

            - Heat a non-stick skillet or griddle over medium heat.

              - Butter one side of each slice of sourdough bread.

                - Place one slice, buttered-side down, onto the skillet.

                  - Sprinkle half of the shredded Gouda cheese evenly on the bread.

                    - Spoon the roasted mushroom and onion mixture over the cheese, then top with the remaining Gouda cheese.

                      - Place the second slice of sourdough on top, buttered-side up.

                        Grill the Sandwich:

                          - Cook for 4-5 minutes, or until the bottom is golden brown. Carefully flip the sandwich over to the other side and grill for another 4-5 minutes until the bread is crispy and the cheese is melted.

                            Serve:
