8 oz elbow macaroni

1 cup Guinness stout (non-alcoholic)

2 cups whole milk

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

2 cups shredded Irish cheddar cheese

1 cup grated Gruyère cheese

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and black pepper to taste

1/2 cup breadcrumbs (for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes, whisking constantly to eliminate lumps (this creates a roux).
