1 large loaf of crusty bread (like ciabatta or sourdough)

1 cup shredded mozzarella cheese

1 cup shredded sharp cheddar cheese

4 tablespoons unsalted butter, softened

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Place the loaf of bread on a cutting board. Using a sharp bread knife, make deep cuts into the bread at 1-inch intervals, being careful not to cut all the way through the bottom.

      In a small bowl, mix the softened butter, minced garlic, dried oregano, dried thyme, red pepper flakes (if using), salt, and pepper until well combined.

        Carefully spread the garlic herb butter mixture between the slices of the bread, making sure it gets into all the crevices.

          Next, stuff the shredded mozzarella and cheddar cheese into the slices of the bread. Use a generous amount, pressing it down so it fits.

            Wrap the entire loaf in aluminum foil and place it on a baking tray. Bake in the preheated oven for 20 minutes.

              After 20 minutes, unwrap the foil and return the bread to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the crust is golden brown.

                Remove from the oven and let it cool for a couple of minutes. Sprinkle with fresh parsley before serving.
