1 cup whole wheat flour

1/2 cup unsweetened cocoa powder

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/4 cup maple syrup (or honey)

1/3 cup unsweetened applesauce

1/2 cup non-dairy milk (or dairy milk)

1 teaspoon vanilla extract

1/4 cup dark chocolate chips (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a mini muffin pan with paper liners.

    In a medium bowl, mix together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt until well combined.

      In a separate large bowl, whisk together the maple syrup (or honey), applesauce, non-dairy milk, and vanilla extract until smooth.

        Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix. If using chocolate chips, gently fold them in at this point.

          Using a small scoop or spoon, fill each mini muffin cup about 2/3 full with batter.

            Bake in the preheated oven for 10-12 minutes, or until a toothpick inserted in the center comes out clean.

              Allow the mini muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
