1 cup Medjool dates, pitted

1/4 cup natural peanut butter (or almond butter)

1/2 cup unsweetened almond flour

1/4 cup dark chocolate chips (dairy-free if desired)

1 tablespoon coconut oil

1/4 teaspoon sea salt

1/2 teaspoon vanilla extract

1/4 cup crushed peanuts

Instructions
 

Prepare the Dates: In a food processor, blend the pitted Medjool dates until they form a sticky paste. You may need to scrape down the sides to ensure all dates are blended well.

    Make the Base Layer: Line a small baking dish (around 8x8 inches) with parchment paper for easy removal. Press about two-thirds of the date paste into the bottom of the dish to form an even layer.

      Peanut Butter Layer: In a small bowl, mix the natural peanut butter with the sea salt and vanilla extract. Spread this mixture over the date base evenly.

        Almond Flour Layer: In another bowl, mix the almond flour with the remaining one-third of the date paste until combined. Press this mixture over the peanut butter layer evenly.

          Chocolate Topping: In a microwave-safe bowl, melt the dark chocolate chips with the coconut oil in 30-second intervals, stirring in between until smooth. Once melted, pour the chocolate over the top layer and spread evenly.

            Add the Crunch: Sprinkle the crushed peanuts on top of the melted chocolate while it's still warm. Gently press them down to ensure they stick.

              Chill: Place the dish in the refrigerator for at least 1 hour or until the chocolate is set.

                Cut and Serve: Once firm, remove the block from the dish using the parchment paper. Cut into bite-sized bars and enjoy!
