1 cup whole wheat flour

1/2 cup rolled oats

2 tablespoons ground flaxseed

1 tablespoon baking powder

1/2 teaspoon salt

1 cup almond milk (or any milk of your choice)

1 medium ripe banana, mashed

2 tablespoons honey or maple syrup

1 teaspoon vanilla extract

2 cups fresh strawberries, hulled and sliced

1 tablespoon lemon juice

Optional: Greek yogurt or whipped coconut cream for serving

Instructions
 

In a large mixing bowl, whisk together the whole wheat flour, rolled oats, flaxseed, baking powder, and salt until evenly combined.

    In another bowl, mix the almond milk, mashed banana, honey (or maple syrup), and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.

        Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with cooking spray or brush with oil to prevent sticking.

          Pour about 1/2 cup of the waffle batter onto the center of the waffle iron (adjust based on your waffle iron size). Close the lid and cook until the waffles are golden brown and crispy, about 4-5 minutes (or as instructed by your waffle iron).

            Meanwhile, in a mixing bowl, combine the sliced strawberries and lemon juice. Toss gently to coat and set aside for the flavors to meld.

              Once the waffles are cooked, serve them warm with a generous topping of the strawberry mixture. You can also add a dollop of Greek yogurt or whipped coconut cream for extra creaminess and flavor.
