1 ham bone (with some meat left on)

4 cups low-sodium chicken broth

2 cups water

3 medium potatoes, diced (Yukon Gold or red)

2 cups green cabbage, chopped

2 carrots, sliced

1 onion, diced

2 cloves garlic, minced

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Aromatics: In a large stockpot, heat the olive oil over medium heat. Add the diced onion and minced garlic, cooking for about 3-4 minutes, or until the onion becomes translucent.

    Add Carrots and Broth: Stir in the sliced carrots and continue cooking for an additional 2-3 minutes. Pour in the chicken broth and water, and bring the mixture to a gentle boil.

      Incorporate Ham Bone: Add the ham bone to the pot along with the dried thyme, bay leaf, and freshly cracked pepper. Allow the broth to simmer for about 20 minutes to infuse the flavors.

        Add Potatoes and Cabbage: Stir in the diced potatoes and chopped cabbage. Return to a simmer and continue cooking for another 30-40 minutes, or until the potatoes are tender and easily pierced with a fork.

          Finish and Adjust Seasoning: Once cooked, remove the ham bone and bay leaf from the soup. If any meat remains on the bone, shred it off and return it to the pot. Taste the soup and adjust with salt and pepper as needed.

            Serve: Ladle the hearty soup into bowls and garnish with fresh parsley for a pop of color.
