2.5 to 3 lbs beef tenderloin roast

½ cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh rosemary, chopped

2 tablespoons fresh thyme, chopped

1 tablespoon fresh parsley, chopped

2 teaspoons Dijon mustard

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

Preheat your oven to 425°F (220°C).

    In a mixing bowl, combine the softened butter, minced garlic, chopped rosemary, thyme, parsley, Dijon mustard, salt, and pepper. Mix until well blended to create the herb butter.

      Pat the beef tenderloin dry with paper towels and season all sides generously with salt and pepper.

        In an oven-safe skillet, heat the olive oil over medium-high heat. Once hot, sear the beef tenderloin on all sides (about 2-3 minutes per side) until it achieves a rich golden color.

          Remove the skillet from the heat and spread the prepared herb butter evenly over the seared tenderloin.

            Transfer the skillet to the preheated oven and roast for 20-30 minutes, or until a meat thermometer registers 130°F (54°C) for medium-rare doneness.

              Once done, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for 10-15 minutes before slicing.

                Slice the beef into medallions and serve with any remaining herb butter drizzled on top.
